It's so creamy, so amazingly yummy...I have to find a way to do this at home.
I messed around with ingredients until I came to this one. The mayo (as weird as it sounds) gives it tang.
I know some people want more "authentic" and will add artichokes...feel free. For my anti-artichoke family, I left them out. (not sure if it will change the flavor at all)
I find that the tortilla chips add enough salt, but if you like your food very salty, please feel free to replace the garlic powder with garlic salt.
8 oz Cream Cheese
10 oz Chopped Spinach
¼ C Sour Cream
¼ C Mayo
1 C Monterey Jack Cheese
1 Tsp Garlic Powder
Tortilla Chips (for serving)
1. Bring cream cheese to room temperature
2. If spinach is frozen, thaw and strain all water
3. Mix all ingredients
4. Warm and serve

I have never made this and it sounds so good, and how fun to make it (and indulge in it) right at home! I could make this into my whole dinner! Thanks for sharing at Celebrate Your Story!
ReplyDeleteYour dip looks great. We love spinach dip as well and we also have a few (all) anti-artichoke kids in the house.
