Pecan Dainties

I was grocery shopping one day, and this recipe printed out on my receipt. Cool!

Not pleased to find out that this is a crumbly dough recipe. Crumbly dough is not my BFF. In fact, we are sworn enemies.
I never can seem to get it to work like other people do.
My cheeks are burning in shame.

This recipe says it makes 50 cookies. Are you kidding me? I got about 12 small meatball sized ones out of it.
They taste awesome, but, it's tainted for me because I feel inadequate.

Any tips or hints for me?

Ingredients:
½ Cup butter (softened)
¼ Cup powdered sugar
Extra powdered sugar for dusting
¼ Tsp salt
1 Tsp vanilla
1 Cup all purpose flour
1 Cup finely diced pecans


Directions:
1. Preheat oven to 350
2. Mix butter, sugar, salt, and vanilla
3. Gradually add in flour and pecans
4. Chill dough 1 hour
5. Roll dough into marble sized balls
6. Cook for 15 minutes until firm but not brown
7. Roll gently in powdered sugar
8. Cool completely
9. Roll in powdered sugar again

Hot Chocolate Cookies

I love a good cookie any time of the year.

These though, due to the inclusion of hot chocolate, make me feel Christmas-ey; or maybe just winter-y.

Either way, while making them, I started thinking about some memorable Christmas/Winter memories.
Like the time we were all sledding at a hospital (they had a huge hill out front. They don't allow it anymore, poo.) and my dad had a friend of my mother's on his lap.
The idea was, you were supposed to roll out of the sled before you hit the bottom of the hill. She panicked. My dad couldn't move because she didn't. One broken leg later (hey, at least we were already at the hospital) and those sledding days were done.

Another year, we were driving from my grandmother's house to my uncle's on Christmas day. A car backed out of their driveway right in front of my hubby. He started yelling at the car about not paying attention.
Then we realized there was no driver in the car. It had slipped into gear and just slid out of the driveway. We stopped at the house and knocked on the door. The guy came running to collect his car from the middle of the road.

Ahh...cold weather memories!


Ingredients:
2 Sticks butter (softened)
1 Cup sugar
⅔ Cup brown sugar
2 Eggs
1 Tsp vanilla
3 ¼ Cups flour
4 Packages hot chocolate mix
1 Tsp salt
1 ¼ Tsp baking soda
1 Cup white chocolate chips
1 Cup milk chocolate chips
1 Cup semi sweet chocolate chips


Directions:
1. Cream butter and sugars until light and fluffy
2. In separate bowl, mix dry ingredients
3. Add eggs and vanilla to wet mixture
4. Slowly add in the dry ingredients
5. Add all chocolate chips
6. Chill dough for 1 hour
7. Drop onto parchment lined cookie sheet
8. Bake at 350 for 9-11 minutes

Eggs on Toast with Creamy Spinach Sauce

My daughter has inherited my low iron.
Of all the "gifts" I could give her, this one is the suckiest.

She is on a pretty heafty dose of iron every day. In order to not feel, well, horrible all day from the supplements, she must have breakfast every morning.
As a non breakfast type of family, this was a hard routine to get used to. After a couple days of forgetting, she has been eating every AM since.

On the weekends I try to make at least one hot breakfast so make up for all the toast and cereal she has 5 days a week.

When I spotted this recipe on Our Best Bites, it sounded like a winner. Not only are we a spinach loving family, spinach is also very high in iron.
Double bonus!

It was creamy and delicious. I made ours with fried eggs for this particular day. We had some of the spinach mixture left over and I scrambled an egg and mixed it in for another day's breakfast YUM!

Ingredients:
½ Tsp olive oil
1 Cup sliced mushrooms
2 Cups loosely packed spinach
1 oz cream cheese
2-4 Tbsp milk
⅛ Tsp garlic powder
⅛ Tsp onion powder
⅛ Tsp dried oregano
⅛ Tsp salt
2-3 Grinds of black pepper
Toast
Eggs


Directions:
1. Heat a medium skillet to medium high heat
2. Add olive oil and mushrooms. Cook until golden brown.
3. Place cream cheese in a small, microwave safe bowl
4. Warm cream cheese in 20 second intervals until melted
5. Add garlic, onion, oregano, salt, and pepper
6. Add milk a little at a time and whisk until smooth
7. Add spinach to pan with mushrooms until wilted
8. Add cream cheese mixture and stir until heated through
9. Remove spinach mixture, put in a bowl
10. Wipe pan clean and cook eggs as you prefer

11. Spoon spinach mixture over toast, top with egg

Easy Potato Soup

I have this friend, and she is about as obsessed with cooking as I am
(Check her out over at A Day in the Life of Jennay. Yes, I do know her in real life ooohhhh)
We both have started these random recipe swaps with our friends. Well, some of them at least.

Anyhoo...this is the first of those particular recipes, so I am going to add a new label "random recipe swap".
I cannot link back to an original site, so that will have to be the next best thing!

This came from one of her friends named Kelly

Ingredients:
26 oz bag frozen hash browns
28 oz chicken broth
1 Can cream of chicken soup
¼ Cup chopped onion
¼ Tsp pepper
8 oz cream cheese
1 Cup milk
Bacon bits


Directions:
1. Add hash browns, broth, chicken soup, onion, and pepper to crock pot
2. Cook for 1 hour on high
3. Stir then turn to low for 1 hour
4. Add cream cheese and cook 30 minutes
5. Add milk and cook for 10-15 minutes longer
6. Serve and top with bacon bits

Macadamia White Chip Cookies

My mother l-o-v-e-s white chocolate and macadamia. It has to be one of her very favorite pairings.

Since she lives so far away from me, I miss her a lot. We talk multiple times a week, sometimes multiple times a day.
Every now and again I like to ship her something delicious to make her day.

This was one of these moments.

I had bought Ghiradelli white chips for another recipe and saw this on the back of the bag. It went into the mountain-o-recipes and was forgotten until today.

Whipped them up (man, such a better deal on macadamia nuts at Target than at my local grocery!), packed them carefully, and entrusted my yummies to the USPS.
(I also sent her some salty kisses, just because they are fun)

Package made it, happy mother has been texting me every single time she grabs a cookie...and my heart is full!

Ingredients:
1 Cup butter (softened)
1 ½ Cup sugar
1 Cup brown sugar
2 Eggs (room temperature)
1 ½ Tsp vanilla extract
3 Cups flour
½ Tsp baking soda
1 Tsp salt
2 Cups (11 oz) white chocolate chips
1 ½ Cups macadamia nuts (chopped)


Directions:
1. Preheat oven to 350
2. Cream butter and sugars until fluffy
3. Add vanilla and eggs
4. Blend in flour, baking soda, and salt
5. Stir in white chocolate chips and nuts
6. Bake on prepared cookie sheets for 10-12 minutes
