Bacon Quiche Biscuit Cups

We have discussed this before, my obsession with collecting new recipes. It's great, but it also means I have a mountain to go through!
This particular one I printed from here...back in 2008. Come on now!

I made these to keep in the fridge for a grab and go breakfast option, and they worked out perfect! The girl child was able to just grab one, pop it in the micro for a few seconds, and munch on the go.

Ingredients:
5 Slices of bacon
8 oz Cream Cheese (softened)
2 Tbsp milk
2 Eggs
½ Cup shredded Swiss cheese
2 Tbsp green onion (chopped)
1 Can golden layers biscuit


Directions:
1. Heat oven to 375
2. Spray 10 muffin cups with cooking spray
3. Cook bacon until crisp, drain on paper towel
4. Crumble bacon and set aside
5. Beat cream cheese in a small bowl until smooth
6. Gradually add milk and eggs, beating until smooth
7. Stir in cheese and onions
8. Separate dough into 10 biscuits, press to form 5 inch round
9. Place one biscuit in each sprayed muffin cup. Firmly press in bottom and up sides.
10. Place half of bacon crumbles in bottom of each cup
11. Spoon cheese mixture evenly into cups
12. Sprinkle remaining bacon over top
13. Bake for 21-26 minutes

Poppin Fresh Barbecups

Hi ho hi ho, it's off to the mall I go!

It's my yearly in-between birthdays mall trip with my friend and her daughter! Our lives are so crazy busy, we set a realistic goal of getting together 2 times a year. Any more is awesome, but 2 is obtainable.
Our birthdays are just a couple of months apart, so we pick a date just in between and meet for lunch and a mall crawl.

It's so much fun just wandering around and getting caught up.

Her daughter has been joining us since she was born...my girl, well, this is the first year she has bagged out on me.
A better offer came along.
She's a teen, I get it.
Seriously, very OK with it...like this OK

Just kidding. I really am all about her spreading her wings and being who she really is
(did I convince anyone?)

Ingredients:
1 lb lean ground beef
½ Cup barbeque sauce
¼ Cup chopped onion
2 Tbsp brown sugar
1 Can junior flaky layered biscuits
½ Cup shredded cheddar cheese


Directions:
1. Preheat oven to 400
2. Spray 10 regular sized muffin cups with cooking spray
3. Cook beef and onions in skillet over medium heat, breaking up, until cooked through
4. Drain meat/onion mixture, return to pan
5. Add barbeque sauce and brown sugar.
6. Cook to blend flavors, stirring well
7. Separate dough into 10 biscuits. Place 1 biscuit in each muffin cup.
8. Firmly press into bottom and up sides
9. Spoon about ¼ cup beef mixture into each cup
10. Sprinkle with cheese
11. Bake 10-12 minutes or until biscuit edges are golden brown

Bacon Onion Cheddar Biscuits

Bacon + Onion+ Cheddar in a biscuit...SOLD!

Not for a meal, not for a side, just on a whim I whipped these up one Sunday afternoon. As hubby and I were chopping away, we were trying to decide what they would actually go with.

They have such a strong flavor, they stand well on their own and might overpower a piece of your meal.
We decided these would be perfect for a brunch.
That way people are picking and choosing and actually looking for a plethora of flavors.

So, here you go, adapted from Brown Eyed Baker, some yummy brunch biscuits!


Ingredients:
2 Cups all purpose flour
1 Tsp baking powder
¾ Tsp salt
4 Tbsp butter, cubed and chilled
10 Tbsp milk
4 Tbsp vegetable oil
1 Egg
10 slices thick cut bacon
1 Cup finely diced onion
1 Cup shredded cheddar cheese


Directions:

1. Preheat oven to 375 degrees

2. Grease a standard muffin pan and set aside
3. Fry the bacon in a skillet until crisp.
4. Pour off grease, reserving about 1 Tbsp
5. Cook onions in reserved bacon grease until soft and browned
6. Remove from pan to cool
7. Chop the cooled bacon and set aside
8. Whisk together the flour, baking powder, and salt
9. Cut the butter into the flour mixture until combined and the mixture is crumbly
10. In a small bowl, whisk together the milk, oil, and egg
11. Add the milk mixture to the dry ingredients and mix until mostly moistened
12. Add bacon, onions, and cheddar cheese. Gently mix together until combined.
13. Spoon batter into prepared muffin pans
14. Bake 20-22 minutes, or until golden brown

I forgot the dang bacon! Then again, it just wouldn't be my blog if I remembered everything all the time!

Serve warm...they just melt in your mouth!

Cheese Muffins


My friend's aunt Clare sent me this recipe. I call her my aunt too. We are comfortable like that!

I had a good laugh at her instructions, I will add them in red with the "real" instructions. She never fails to make me laugh...a lot!

I made these last night, and almost half of them just seemed to disappear. The girl child managed to ingest a few of them for breakfast this morning as well. I see nothing wrong with this.

These are reminiscent of the Cheddar Bay biscuits I have made, so I added a little garlic powder (about 2 Tsp) to the mix for an extra layer of flavor. This is not a necessity.

Easiest, YUMMIEST, cheese muffins of all time

Ingredients:
2 Cups Bisquick
1 Stick butter (melted)
1 Cup sour cream
2 Cups shredded sharp cheddar

Directions:
1. Preheat oven to 425
2. Spray a mini muffin tin with cooking spray
3. Mix all ingredients, fill muffin tins
4. Bake for 15 minutes or until golden brown
Eat entire batch, repeat.
Have never tried to make this low fat, one day I might try...but probably not.
Overfill each muffin cup, it's worth it.


Feel free to ignore my garlic powder if you don't want to use any

These had not been out of the oven but a minute and I had eager hands grabbing at them!

Cheddar Bay Biscuits (Red Lobster)

I came across this recipe a million years ago. I wish I could pinpoint where so I could give credit...but a quick look on Pinterest shows this coming from EVERYWHERE. So, it's impractical to link to a million sites.


Ingredients:
2 Cups Bisquick
⅔ Cup milk
½ Cup shredded cheddar cheese
½ Cup butter (melted)
¼ Teaspoon garlic powder

Directions:
1. Heat oven to 450
2. Mix Bisquick, milk, and cheese until a soft dough forms
3. Drop by spoonfulls onto a baking sheet
4. Bake 8-10 minutes or until golden brown
5. Mix butter and garlic powder
6. Brush butter mixture over warm biscuits
