For all of you who are saying "beets...ew!" don't knock it until you try it!
As far as peeling the beets, so many people have their own preferred methods. I peel them while raw with a potato peeler. It just works for me.
Also, there are different methods for the bacon. Some people like to fry and crumble their bacon before adding to the soup, I chop mine up small and add raw.

ReplyDeleteMy sister adores beet soup. I have to admit it's not my favorite, but I know it's so healthy to eat beets.
ReplyDeleteYou had me with adding the bacon. Think I'll try this this weekend!
ReplyDeleteWhat an easy soup! Although I am a vegetarian and love beets, the bacon wouldn't work for me. - but I would love the cream.
ReplyDeleteOh Judee...please do try it without the bacon! I usually have to make two batches as my daughter is a vegetarian. She loves it still!
