Fizzy Candy Cake

I am a child of the 80's, and I wear my mall bang memories proud!
When I saw a recipe in Woman's World that included my all time fave, Pop Rocks, into a cake...I am so totally in!

I made this and brought it to a family get together on hubby's side. His cousin R looked at me and said "there is a popping in my teeth, and it won't stop...and it is AWESOME".

So, dig out your old acid washed jeans and whip this up for a fun change.

Note: I could not find the orange cake the recipe called for, so I used strawberry.
The flavor was great, and the color accented the speckled frosting very nicely.

Ingredients:
2 Boxes Orange cake mix
read box for additional ingredients needed
1 Lb salted butter (room temperature)
7-8 Cups confectioners’ sugar
6 Envelopes Pop Rocks
Large Sweet Tarts or Bottle Caps for decoration

Directions:
1. Make cake in 3 9-inch round cake pans, cool completley
2. Mix butter, adding 1 cup of sugar at a time until desired consistancy
3. Mix in all of the Pop Rocks
4. Frost between layers and all around cake.
5. Decorate with candies

Just look at the pretty cake, ignore my random groceries that I didn't bother moving from the background!

  1. What a fun cake, Jay, and I love how you have decorated it! I loved the eighties and it's great to see things like this coming back. Thank you so much for sharing, and for being a part of the Hearth and Soul Link Party. Hope to 'see' you again this week!
