Cappuccino Cinnamon Squares

I am a mocha junkie...coffee and chocolate are BFF's and that is just fine by me!
I saw this recipe online and knew I had to try it.

We went to visit friends and they have two littles. Neither of the munchkins cared for the flavors. We adults loved them, and consider them to now be child-safe desserts!



Ingredients:
For the cake:
1 ¼ Cup plus 2 Tbsp sugar
1 Tbsp plus 2 ½ Tsp ground cinnamon
1 Tbsp plus 1 ½ Tsp instant espresso powder
1 ¾ Cups all purpose flour
Pinch of salt
¾ Cup milk
2 Large eggs
½ Tsp vanilla extract
1 Stick plus 2 Tbsp unsalted butter (melted and cooled)
3 oz bittersweet chocolate, finely chopped

For the frosting:
6 oz bittersweet chocolate, finely chopped
2 ½ Tbsp unsalted butter, cut into 4 pieces

Directions:
1. Center a rack in the oven and preheat the oven to 350
2. Grease an 8 inch square baking dish
3. Stir 2 Tbsp of the sugar, 2 ½ Tsp of the cinnamon, and 1 ½ Tsp if the espresso powder together in a small bowl.
4. In a large bowl, whisk together the flour, the remaining 1 ¼ cups sugar, the baking powder, salt and the remaining 1 Tbsp cinnamon.
5. Mix the remaining 1 Tbsp of the espresso powder into the milk and warm the milk in the microwave until it is hot enough to dissolve the coffee. Cool the milk,
6. In another bowl, whisk together the milk, eggs, and vanilla.
7. Pour the liquid ingredients over the flour mixture and gently whisk until you have a homogeneous batter.
8. Using the whisk or rubber spatula, fold in the butter with a light touch, just until butter is absorbed. The batter will now be smooth and satiny.
9. Scrape half the batter into the pan and smooth the top.
10. Sprinkle the chocolate over the batter and dist with the cinnamon sugar mixture. Cover with the rest of the batter and smooth top again.
11. Bake for 40 minutes, or until the cake is puffed and beginning to pull away from the sides of the pan.
12. Cool completely before frosting.
13. To make the frosting: Put the chocolate and butter in a double boiler. Cook, stirring gently and often, just until they melt. Spread the frosting in generous sweeps.
14. Allow the frosting to set at room temperature. Cut cake into 9 squares.
