16 Minute Beef and Bean Burritos

The girl who sat next to me at work has moved on to a different job, in a totally different field. I wish her well!!
I had a new (temporary, while they played musical desks) neighbor, she happened to say something and my response was "oh, that happened when we had our flood".

She looked at me like I had 10 heads (one would think I would be used to such a thing by now).

So the story goes...
I sit in the middle right cube in a section of 6.
We had contractors everywhere building a new section of our office.
My neighbor to my right yelled over one day and said "do you hear dripping?"
Next thing we knew it was Niagra Falls


Gah!

A pipe burst over our heads! 
People came running like ants...it was chaos! We were trying to get all of our computers unplugged and out of the line of fire. Then someone remembered the printers. It was madness I tell you!

My neighbor got the worst of it. My desk got some, but the majority landed in a small lake under my desk.

Oh it was something to behold.

We then became other people's temporary neighbors while our desks and ceilings were repaired.

Nights like that, I am more than happy to make a quick, easy meal. 
Running around trying not to get shocked by office equipment is hard work!

Ingredients:
2 Lbs ground beef
½ Medium onion
1 (7 oz) can Mexican tomato sauce or Enchilada sauce
Salt and Pepper
Cumin, Oregano, Chili Powder
1 (28 oz) can refried beans
¾ Cups grated cheddar cheese
Sour Cream and Salsa to top
12 Burrito sized flour tortillas

Directions:
1. Brown ground beef with onion and season to taste
2. Pour in sauce and simmer (reserve a little sauce to top the burritos)
3. Heat refried beans in a sauce pan
4. Heat tortillas in the microwave for one minute
5. Spread small amount of beans on each tortilla
6. Add seasoned meat
7. Fold over ends and then roll up
8. Place two burritos on microwave safe plate
9. Drizzle read sauce over burritos and sprinkle with grated cheddar
10. Microwave for one minute until cheese is melted

Grilled Pineapple with Cinnamon Vanilla Yogurt Dip

Hubby and I ran to the grocery the other day to do our weekly shop. At one point I had forgotten something (shocker) and told him I would be right back.
I came right back, no hubby
Waited off to the side for awhile, no hubby

:::sigh:::

Decided it was time to wander and go find him.
Entered the freezer section and located the long lost man in my life. He had been hijacked by friends of ours.
We haven't seen them much due to crazy schedules, so it was nice to catch up for a minute.

During conversation, she pointed to her cart and made mention to trying to "be good" lately.
Then she turns around and says "our house, fire, drinks, Saturday, be there".
Okie dokie!

In the back of my head the whole "trying to be good" thing kept reverberating. I wasn't going to show up empty handed, but wanted to not tempt her with naughty yummies.

I dug through my recipe pile, and found this one by Hungry Girl.
Perfect! Sweet, but yet, not naughty!

Ingredients:
16 Pineapple rings
6 oz plain greek yogurt
1 Tbsp sugar
⅛ Tsp cinnamon
⅛ Tsp vanilla


Directions:
1. Lay pineapple on grill or grill pan flat
2. Cook until slightly blackened and caramelized
3. Flip and cook the other side
4. Combine all other ingredients
5. Chill dip for 10 minutes before serving

Honey Date Muffins

I have been thinking about taking a vacation to NYC.
There is so much to see and do there, and I haven't been since I was 10 (or so).

We tried to do a day trip a few years back to see the Christmas decorations, but due to a medical emergency, we were unable to go.
Maybe I will try again this year...and hope for the best.

Have you been to NYC? Any suggestions as to what is a must see/do? Must eat?

Ingredients:
2 ½ Cups baking mix (like Jiffy)
2 Tbsp instant vanilla pudding
¼ Cup sugar
1 Tsp baking powder
¼ Cup butter (softened)
1 Egg
¼ Cup honey
¾ Cup dates (chopped)


Directions:
1. Preheat oven to 350
2. Grease a muffin pan
3. Combine all dry ingredients
4. Add butter and mix well
5. Add milk, egg, honey, and dates into the mixture
6. Fill prepared muffin cups
7. Bake 15-20 minutes

Banana Chip Muffins

My daughter started driver's ed a couple summers ago
(oh how OLD I feel!)
There were two options for classes, 2 nights a week for 6 weeks or all day for 5 days straight.

Due to scheduling, the all day classes are what would work best for her.
The downfall to that is that she had to be at class for 9 am every day. Seriously? What do regular working parents do?

Luckily I have an auntie who starts work later in the day, so she was able to bring her for me.
(thank you thank you thank you)
Otherwise, I am not sure she would have been able to take the class.

I don't know what I would do without family! It really does take a village to raise a child!

Ingredients:
1 Pkg banana muffin mix
2 Tbsp quick oats
⅔ Cup mini chocolate chips
2 Banana (mashed)
2 Eggs
½ Cup milk


Directions:
1. Preheat oven to 400
2. Grease a muffin pan
3. Combine all ingredients until blended
4 Pour into prepared cups
5. Bake 12-14 minutes
