Reese's Puffy Cookies

I feel like the name of these cookies might be a bit deceiving.
I received a box of these cookies from my friend Jennay from A Day in the Life of Jennay and they were big, puffy, and delicious!

She sent me the recipe. I made them. They were delicious...but nowhere near big and puffy.

We talked the next day, I did nothing wrong as far as she can tell. Best we can come up with is the fact that it was yucky out here. Weather matters.

I will keep trying to make them puffy though, since hubby and the girl ate them all, we need more in the house!

Ingredients:
2 ¼ Cup all purpose flour
1 Tsp salt
1 Tsp baking soda
1 Cup brown sugar
½ Cup sugar
1 Cup softened butter
1 Tsp vanilla
2 Large eggs
10.5 oz bag of Reese’s Pieces

Directions:
1. Preheat oven to 375
2. Line a baking sheet with parchment paper
3. Combine flour, salt, and baking soda in a medium bowl
4. Combine brown sugar, sugar, butter, and vanilla until creamy
5. Add eggs to wet mixture and beat thoroughly
6. Add dry ingredients slowly, mix well
7. Add Reese’s Pieces and mix
8. Drop rounded tablespoons onto prepared cookie sheet
9. Bake 8-10 minutes

Double Peanut Butter and Milk Chocolate Chip Cookies

A group of us decided to do a cookie exchange...via USPS!
We all are scattered around the country, so we talked about all the virtual ones you see online...but we missed that home touch.

I gathered a list of everyone who wanted to participate, put their names in a hat and matched people up.

We had a two week window in which to create, bake, and ship.
It was about 80% successful, not too bad all in all.

A long time friend, whom I have not seen in years participated. Through email we decided that since neither of us were randomly selected to send to each other, that we would just send them on our own.

In true fashion, life got in the way. We thought we had given each other enough time, but as it came down to the last few days, we both remembered our promise.
A quick email and we are back on track!

This Hershey's recipe sounded like the perfect, yummy, comforting cookie to send to my dear friend.
She won't notice that I stole one...

and shhh...don't tell Hubby and the Girl that I did, I have been telling them that I need this exact amount to send. hehehe.

Ingredients:
1 ¼ Cups all purpose flour
½ Tsp baking soda
¼ Tsp salt
1 Egg
½ Tsp vanilla extract
¾ Cup sugar
⅓ Cup creamy peanut butter
½ Cup butter (softened)
1 Cup milk chocolate chips
1 Cup peanut butter chips

Directions:
1. Heat oven to 350
2. Beat butter, sugar, and peanut butter until creamy
3. Add egg and vanilla, beat well
4. Stir together flour, baking soda, and salt
5. Add flour mixture to butter mixture, mixing well

Magic in the Middles

Wanted:
Someone as slightly messed up in the head as I am.

Seriously...year round I can watch Christmas movies and bake cookies.
Oddly enough, none of my (in-state) friends feel that same longing.

I do have one in FL who might as well share a mind with me. She is always game...but it's a slight bit of a hike for her.

The girl child rolls her eyes at me when she finds out I was listening to Christmas carols on Pandora. In August.
Or September.
Or any month other than December.

Did she really come from ME?

Funny enough though, there are no rolling of the eyes when the cookies come out of the oven. Hm.

Ingredients:
Dough:
1 ½ Cups all purpose flour
½ Cup unsweetened cocoa powder
½ Tsp baking soda
¼ Tsp salt
½ Cup sugar
½ Cup packed brown sugar
½ Cup unsalted butter (softened)
¼ Cup smooth peanut butter
1 Tsp vanilla extract
1 Large egg

Filling:
¾ Cup smooth peanut butter
¾ Cup powdered sugar

Directions:
1. Preheat oven to 375
2. Line 2 baking sheets with parchment paper
3. In a medium bowl, whisk together flour, cocoa, baking soda, and salt.
4. In another bowl, beat together sugars, butter, and peanut butter until light and fluffy
5. Add vanilla and egg, beating to combine
6. Stir in dry ingredients, blending well
7. Prepare filling: In a small bowl, stir together peanut butter and powdered sugar until smooth.
8. With floured hands, roll the filling into 1-inch balls
9. Break off 1 tbsp of dough. Make indentation in the center and press a peanut butter ball into the indent.
10. Bring dough up over filling, pressing it closed.
11. Roll the cookie in the palms of your hands to smooth it out.
12. Dip the top of each cookie in granulated sugar and place on baking sheets about 2 inches apart
13. Grease the bottom of a drinking glass and use it to flatten each cookie to about ½ inch thick
14. Bake for 7-9 minutes

Peanut Butter Cookie Cheesecake Bars

Hubby dearest was going to hang out with some of his friends and watch some sporting event...I don't think it matters which one...they are guys, they will watch ANY sport. They also like to watch the replays...over and over and over.

Caveman time, oops, I mean "guy time" is important. They don't gather without the wives very often, so it's good for the soul

The girl child and I look forward to it, we get to just BE!

My mother always taught me never to go somewhere empty handed, I assume that means even when it's not me that is going.
Knew this would be a guy pleasing dessert. I have yet to meet a guy who didn't have some sort of ingrained soft spot for anything involving peanut butter.

When hubby came home, he said that the host was going nuts over this dessert. In the meantime, the host's wife came home from work and tried one and sent me a text. All it said was "OMG can I say yummmmmm". I assumed she meant these bars, considering it was all I sent.

Try them, you will be glad you did.

Ingredients:
1 Cup peanut butter
½ + ¼ Cup granulated sugar, divided
½ Cup brown sugar
1 Tbsp vanilla
2 Eggs
¼ Cup sour cream
8 oz cream cheese, room temperature
¾ Cup chocolate chips
½ Cup Reese’s Pieces

Directions:

1. Line a 9x9 baking pan with foil and spray with cooking spray.

2. Preheat oven to 350

3. Mix peanut butter, ½ cup sugar, brown sugar, vanilla, and one egg in a large bowl.

4. Press into the bottom if your prepared pan

5. Sprinkle chocolate chips over peanut butter layer

6. Beat cream cheese, sour cream, 1 egg, and ¼ cup sugar.

7. Beat on high with hand mixer, trying to remove as many lumps as possible
8. Pour cheesecake mixture on top of chocolate chips and spread to coat evenly
9. Sprinkle with Reese’s Pieces.
10. Bake for 40-45 minutes until the top just begins to brown (center will still wiggle a little)
11. Cool for an hour, and then place in fridge for 4 hours.
12. Slice into bars and serve.

Make sure the cream cheese and sour cream are at room temperature

I had saved a piece at home for the girl child and I. One was not enough!
