Spam Breakfast Burritos

My loyal, loyal readers!
There just are no words.

Every time I think I am back up and running...on schedule no less, something gets in the way.
It's gotten to the point where I have started looking around for hidden camera as this must be a joke.
Sadly, no joke.

Most of what is taking up my time is good.
Promotions at work, vacation with friends and family, etc.
Some is not so great.
Illness, work issues, etc.

I ask those of you who read my silly blog and join in on my link party to be patient with me. I am not going anywhere...and I am trying to go back to my original schedules.
Just forgive me when I fail.
It happens to the best of us.

I miss our time to talk, and to share small pieces of my world with you.
I'm trying...harder...starting now!

Ingredients:
1 (12 oz) Can Spam (cubed)
4 Eggs
2 Tbsp Milk
1 Tbsp Butter
6 (6 inch) Flour tortillas
1 Cup Cheddar cheese (shredded)
1 Cup Monterey Jack (shredded)
Optional Toppings: Taco Sauce, Salsa, Sour Cream


Directions:
1. Heat oven to 400
2. In medium bowl, beat eggs and milk
3. Melt butter in skillet
4. Add egg mixture and Spam
5. Stir while cooking until done
6. Divide egg/Spam mixture and half of the cheeses over the tortillas
7. Roll and place in pan
8. Sprinkle with remaining cheese
9. Bake 10 minutes

Quiche Lorraine Scones

Gah!
That was a nail-biting game for the Patriots.
I really wasn't sure they were going to pull it off!

There were only 4 of us in the room watching the game, and I could hear each of our hearts thumping.
Or...it could have just been mine multiplied.

OMG
We are off to the big game!

Feb 4th I will be in a house with 30 friends and family.
I have the feeling we would manage to set blood pressure records.
(do we remember last year, holy schnikes!)







Ingredients:
2 Cups + 1 Tsp flour (divided)
1 Tbsp baking powder
Pinch Cayenne powder
Dash Nutmeg
1 Tsp Salt
8 Tbsp Butter (cold, diced)
½ Cup Half and Half
2 Eggs
4 oz Swiss cheese
3 Green onions (thinly sliced)
7 Strips bacon (cooked and crumbled)
Egg wash (1 egg beaten with 1 Tsp water)


Directions:
1. Preheat oven to 400
2. Line a baking sheet with parchment paper
3. Prepare bacon, onion, and cheese
4. Toss those ingredients with 1 Tsp flour, set aside
5. Combine flour, baking powder, cayenne, nutmeg, and salt
6. Cut in the butter
7. Lightly beat eggs with half and half
8. Add eggs to the flour mixture
9. Add the bacon mixture
10. Knead on a well floured surface for less than a minute
11. Pat dough out to ¾ to 1 inch thickness
12. Cut dough with biscuit cutter or cut into triangles
13. Place scones onto prepared baking sheets
14. Brush tops of scones with egg wash
15. Bake about 20 minutes, or until golden brown

Mediterranean Feta Egg Scramble

I love me some feta cheese.
I eat it plain as a snack, love it in dips, adore it on salads...and melt when it's used as a pizza topping.

Fortunately, the people I share my life with feel the same way. None of us will ever turn our noses up at something that includes feta cheese.

When I saw this recipe on Our Best Bites, I knew it would be a favorite! Whipped it up quick one Sunday morning and hubby and I ate every bite in our bowls.
There is still a serving on the stove.
Just sitting there, waiting.

My snoozy girl child has yet to wake up and join us.
It would be in her best interest to do it soon...I might be feeling a smidge hungry again!

Ingredients:
6 Eggs
¼ Cup sour cream
¼ Tsp salt
Cracked black pepper to taste
¼ Tsp garlic powder
½ Tsp dry basil
½ Tsp dry oregano
¾ Cup crumbled feta cheese
2 Tbsp diced roasted red peppers
2 Tbsp minced green onions
1 Tbsp butter


Directions:
1. Preheat a skillet over medium heat
2. Whisk eggs,sour cream, salt, pepper, basil, oregano, and garlic powder together
3. Gently fold in feta cheese
4. Add butter to heated pan
5. Add eggs to pan and stir
6. Add in red peppers and green onion
7. Cook eggs until cooked through

Eggs on Toast with Creamy Spinach Sauce

My daughter has inherited my low iron.
Of all the "gifts" I could give her, this one is the suckiest.

She is on a pretty heafty dose of iron every day. In order to not feel, well, horrible all day from the supplements, she must have breakfast every morning.
As a non breakfast type of family, this was a hard routine to get used to. After a couple days of forgetting, she has been eating every AM since.

On the weekends I try to make at least one hot breakfast so make up for all the toast and cereal she has 5 days a week.

When I spotted this recipe on Our Best Bites, it sounded like a winner. Not only are we a spinach loving family, spinach is also very high in iron.
Double bonus!

It was creamy and delicious. I made ours with fried eggs for this particular day. We had some of the spinach mixture left over and I scrambled an egg and mixed it in for another day's breakfast YUM!

Ingredients:
½ Tsp olive oil
1 Cup sliced mushrooms
2 Cups loosely packed spinach
1 oz cream cheese
2-4 Tbsp milk
⅛ Tsp garlic powder
⅛ Tsp onion powder
⅛ Tsp dried oregano
⅛ Tsp salt
2-3 Grinds of black pepper
Toast
Eggs


Directions:
1. Heat a medium skillet to medium high heat
2. Add olive oil and mushrooms. Cook until golden brown.
3. Place cream cheese in a small, microwave safe bowl
4. Warm cream cheese in 20 second intervals until melted
5. Add garlic, onion, oregano, salt, and pepper
6. Add milk a little at a time and whisk until smooth
7. Add spinach to pan with mushrooms until wilted
8. Add cream cheese mixture and stir until heated through
9. Remove spinach mixture, put in a bowl
10. Wipe pan clean and cook eggs as you prefer

11. Spoon spinach mixture over toast, top with egg

Bacon Quiche Biscuit Cups

We have discussed this before, my obsession with collecting new recipes. It's great, but it also means I have a mountain to go through!
This particular one I printed from here...back in 2008. Come on now!

I made these to keep in the fridge for a grab and go breakfast option, and they worked out perfect! The girl child was able to just grab one, pop it in the micro for a few seconds, and munch on the go.

Ingredients:
5 Slices of bacon
8 oz Cream Cheese (softened)
2 Tbsp milk
2 Eggs
½ Cup shredded Swiss cheese
2 Tbsp green onion (chopped)
1 Can golden layers biscuit


Directions:
1. Heat oven to 375
2. Spray 10 muffin cups with cooking spray
3. Cook bacon until crisp, drain on paper towel
4. Crumble bacon and set aside
5. Beat cream cheese in a small bowl until smooth
6. Gradually add milk and eggs, beating until smooth
7. Stir in cheese and onions
8. Separate dough into 10 biscuits, press to form 5 inch round
9. Place one biscuit in each sprayed muffin cup. Firmly press in bottom and up sides.
10. Place half of bacon crumbles in bottom of each cup
11. Spoon cheese mixture evenly into cups
12. Sprinkle remaining bacon over top
13. Bake for 21-26 minutes

Bacon and Cheese Quiche

I promised the girl I would make her some breakfast on a Saturday morning.
This happened to be the same Saturday that we were going to be off volunteering that day.
Mega rush morning.

Wasn't thinking clearly, and had promised her this quiche.
(Adapted from Pillsbury)

When one is trying to get a family of three out the door and make breakfast...one must be ready to improvise. My bacon was frozen. No think ahead Mama here...nope. Sigh. No time to thaw it, and microwave thawing bacon just makes me gag.

Welcome bacon bits, I am so happy to see you today!
I changed the original recipe to include bacon bits instead of bacon pieces and it was still delicious. Whew! Promise keeper status upheld!


Ingredients:
1 Refrigerated pie crust (softened)
1 Cup half and half
4 Eggs (slightly beaten)
¼ Tsp salt
¼ Tsp pepper
½ Cup bacon bits
1 Cup shredded cheddar cheese
¼ Cup grated Parmesan cheese



Directions:
1. Heat oven to 350
2. Place pie crust in 9 inch pie plate
3. In medium bowl, mix half and half, eggs, salt, and pepper
4. Layer bacon and cheeses in crust lined plate
5. Pour egg mixture over the top
6. Bake 40-50 minutes or until knife inserted in center comes out clean
7. Let stand 5 minutes before serving

Breakfast Burritos

Remember that yard sale we had at Nana's house?
(I made this awesome cheesecake?)
Since it was fall, in New England, and we would be outside...and walking around....I wanted to make a hot, portable breakfast for all.

Burritos were the answer.
Hot check!
Individual check!
Portable check!
Delicious check!

You want to start with the basic must haves: Tortilla, eggs, cream, salt and pepper (to make the scrambled egg base)
I was making 10 burritos, so I made the whole dozen eggs.
I like my eggs just slightly underdone. Reason being, these were being made the night before and heated in the oven the next morning. Nobody wants dry eggs!

Then I looked around to see what veggies I had available in the house
I didn't have any mushrooms (boo hiss!) but even if I had, I would not have put them in all of them since mushrooms are one of those foods that some people just can't handle. 
I sliced up all the veggies and sauteed them a bit before adding them into the egg.

Time to see what cheeses are in the house
I ended up putting a few cheese singles into the egg for creaminess and then adding the sharp cheddar for some tang

Now, on to the meat selection

OK, good enough variety!

After the eggs, veggies, and meat were cooked, it was time to stuff the burritos!
Add all the goodies you plan to....

Wrap it up nice and tight


Cover with tin foil and label.
I warmed them in the oven for awhile before heading out.

I ended up making 5 veggie with smoked gouda and 5 that were bacon and sausage with swiss cheese.

Everyone enjoyed just being able to "peel and eat"!


Ingredients:
12 Eggs
5 Tbsp Half and Half
Salt and Pepper
Cheeses
Veggies
Meats
10 Tortillas

Directions:
1. Saute vegetables
2. Cook meats
3, Mix egg, half and half, and salt/pepper
4. Scramble eggs in pan
5. Optional: melt cheese into your egg
6. Add ingredients to tortillas
7. Wrap like a burrito

English Muffin Breakfast Pizzas


Yesterday marked my parent's anniversary.


How did they celebrate? By taking a cruise.
Seriously.
I tried the whole...won't your trip be so much better with your first-born child?
No takers on that one.

Then I tried the...your oldest and first born granddaughter would make this an epic trip.
Still no takers.

Sigh.
I even tried the whole...doesn't your CHILD remind you of your long and happy marriage, which would increase your happiness?

I am starting to think they didn't feel like bringing us on vacation with them! Humph! Just who do they think they are?!

In all seriousness, they took a trip and planned it so that it was islands they have already been too (most, not all) so they can spend some quality time relaxing on the ship and not feeling like they have to get off at every port.
They thought this through...a cruise to nowhere means everyone stays on ship! Picking islands you don't care to visit again, you can stay on the ship while virtually everyone else gets off.
Nice thinking guys!

I just wanted to give them a well deserved shout out...marriages are hard, every anniversary should be special!

(sort of like this year will forever be known as the year Jay begged for a month for a free trip LOL)






Ingredients:
6 English muffins
4 Eggs (room temperature)
2 Tbsp milk
¼ Tsp salt
10 (or so) Dashes hot sauce
Ham slices or cooked bacon
1 Cup shredded cheddar cheese
Optional: Veggies, tomatoes, olives, etc


Directions:
1. Preheat oven to 400
2. Line a baking sheet with tin foil and spray with cooking spray
3. In a shallow dish, whisk eggs, milk, salt, and hot sauce
4. Separate English muffins and soak each side in the egg mixture
5. Place, cut side up, on prepared baking sheet
6. Add choice of meat and any desired toppings
7. Sprinkle with cheddar cheese
8. Bake 15 minutes
