Buffalo Chicken Sliders

I went to my little cousin's gymnastics competition yesterday.
For a little 8 year old, she rocked the house! All of her scores were over an 8 and she won the judges' award for highest jump on the vault.

It was so awesome to watch as we know she loves loves loves being on a competition team. She is always willing to put forth the extra effort, and it shows.

What I didn't like though, was seeing some other kids who were scared, nervous, or didn't want to be there.
Mom and dad wanted them to be there.

It made me reflect back on the girl child and all the activities she has tried over the years.
I feel confident that we never "made" her join anything she didn't want to.
Granted, we made her stick with it...if you sign up for a season of, say, violin...you will follow through. If you don't like it, you don't have to re-sign up.

Hubby reminded me of her soccer days.
Oh my word LOL
I think she spent more time on the sidelines turning her hoodie into a scarecrow than watching the game...but, she enjoyed playing and insisted on signing up again.

I love everything that organized events teach our kids: teamwork, rules, etc...
but let them do what they are into, not you!




Ingredients:
2 Cups shredded chicken
Slider Buns
3 Tbsp Butter
½ Cup Hot sauce
4 Tbsp Honey
2 Tbsp White vinegar
¼ Tsp Pepper
½ Tsp Salt


Blue Cheese Spread
½ Cup Sour cream
¼ Cup Blue cheese (crumbled)
1 Tbsp vinegar
3 Green onions (chopped)
Salt and Pepper to taste


Directions:
1. Melt butter in saucepan over medium heat
2. Add hot sauce, honey, vinegar, salt, and pepper
3. Add shredded chicken and heat through
4. Mix all ingredients for blue cheese spread
5. Assemble sandwiches

BBQ Chicken Wrap with Blue Cheese Slaw


Happy New Year!

I hope 2018 brings to you new possibilities and adventures.

Is anyone making any resolutions? I didn't keep up with mine too well, but, that's OK.
I figure I did so well with the week in review one, it makes up for last years lack,

My aunt was on the receiving end of my grandmother's recipe box.
I am currently going through and taking pictures of these old handwritten (or typed!) recipes of hers. This year, my resolution will be to make some, hopefully all, of these recipes.
Reasonable...or so it seems today!



Ingredients:
Wrap
1 Cup BBQ sauce
4 (8 inch) Tortillas
1 Cup Cole Slaw


Cole Slaw:
2 Cups Shredded cabbage
1 Shredded carrot
¼ Cup mayonnaise
¼ Cup Sour cream
2 Tbsp Grainy mustard
1 Lemon (juice)
Salt and Pepper to taste
¼ Cup Blue cheese


Directions:
1. Assemble slaw and refrigerate for an hour
2. Mix chicken and BBQ sauce
3. Top wraps with chicken
4. Add cole slaw

Stuffed French Bread Cheeseburger



Merry Christmas to all!
No matter what holiday you celebrate, I hope it is spent with friends and family.


This is my first year with the girl child as "Santa's Helper".

Her and hubby sort of ganged up on me and used the whole "she's, um, an adult" reasoning. Any mama will tell you, it's a sad (yet happy) moment. I have to relinquish that part of her kid-ness and allow her to be part of the adult-ness of it all.
Oh how bittersweet.
Ingredients:
1 Lb Ground beef
¼ Cup Onion (chopped)
1 Can (10 ¾ oz) Tomato soup
½ Tsp Garlic salt
¼ Tsp Salt
¼ Tsp Pepper
1 Lb French Bread (whole)
1 Tbsp Butter (softened)
8 oz Velveeta (sliced)


Directions:
1. In large saucepan, cook beef and onions
2. Add tomato soup, garlic salt, salt and pepper
3. Simmer for 5-10 minutes
4. Slice the top third off the bread, scoop out middle
5. Spread butter on removed top
6. Spoon beef mixture into bread shell
7. Arrange cheese slices on top
8. Broil 2-3 minutes or until cheese is melted
9. Replace bread on top

Sloppy Joes

My hubby is a Manwich junkie.

I won't make you relive my silly story about it, if you are interested, you can click on the link.

It was a hard sell to get him to eat another sloppy joe. He is one of those "if it's not broke, don't fix it" sort of folks.

Not only did he have the biggest plate, but he went back for seconds AND ate it for lunch the following day.
That is some serious compliment.

Thanks to Tasty Kitchen for having this recipe, which made hubby open his eyes...and mouth...and stomach....


Ingredients:
2 Tbsp Butter
2 ½ Lbs Ground beef
½ Large Onion (diced)
1 Large Green pepper (diced)
5 Cloves Garlic (minced)
1 ½ Cup Ketchup
1 Cup Water
2 Tbsp Brown sugar
2 Tsp Chili powder
1 Tsp Dry mustard
½ Tsp Red pepper flakes
Worcestershire Sauce (to taste)
2 Tbsp Tomato paste



Directions:
1. Add butter to a large skillet
2. Add ground beef and cook until brown
3. Drain fat from meat
4. Add onions, green pepper, and garlic. Cook until vegetables begin to get soft.
5. Add ketchup, brown sugar, chili pepper, dry mustard and water
6. Simmer for 15 minutes, adding Worcestershire to taste.

Funeral Sandwiches

The name of these sandwiches drives me nuts.
I understand, as a southern girl, I have seen these sandwiches at many a funeral...but still!

We could call them something like "ham and cheese sweet yummies". What do you think?

The recipe I found on Sunday Baker calls for Hawaiian sweet rolls (which are a-ma-zing) but, sadly, my local Stop and Shop does not carry them. I was not going to run from store to store, so I bought some Portuguese sweet rolls.

The inclusion of mustard is non descriptive. I used dijon as it gives a nice taste with the sweet rolls and ham. You can use any kind that you like.

Ingredients:
12 Sweet rolls
1 Lb thin sliced ham
Thin sliced swiss cheese
½ Cup butter (melted)
3 Tbsp Worcestershire sauce
2 Tbsp mustard
2 Tbsp brown sugar
Dash of onion powder


Directions:
1. Cut rolls in half and place in 9 x 13 pan
2. Add ham and cheese to each roll
3. Mix butter, Worcestershire, mustard, brown sugar, and onion powder
4. Pour the liquid over the sandwiches, drenching each one
5. Cover tightly and marinate a minimum of 4 hours
6. Preheat oven to 350
7. Bake for 15 minutes (uncovered)

Hubby's Egg Salad

Last week I posted my very basic egg salad recipe!

Not that hubby doesn't eat his egg salad "my way", but he has his own special blend that he likes...as does the girl child.

Hubby has decided that this is how he likes his egg salad.
I have to admit, due to the onion and pepper, I have never actually tried this version, but he eats it up like I just put filet mignon on his plate.
I think he enjoys how the butter gets all melty into the egg.

I do like butter and salt on a plain hard boiled egg...so I figure it is about the same sort of flavor.

Ingredients:
3 Hard boiled eggs (peeled)
2 Tbsp tub butter
Salt and Pepper to taste
2 Tbsp diced onion
2 Tbsp hot pepper


Directions:
1. Chop egg in a bowl
2. While egg is still warm, mix in butter (or warm egg slightly if using cold eggs)
3. Season with salt and pepper
4. Add onion and pepper
5. Mash egg while mixing

Egg Salad

I went for many, many, many years hating egg salad.

One day I woke up...and...well, I liked it.

Makes me feel like a classic case of parenting book advice "it can take 200+ times of tasting an item for a child to develop a taste for it".

Yeah, that's me.

Truly, it never occurred to me to "write down" a recipe for my egg salad! The girl child wanted some one day....and just stood there staring at me.
When I asked what she was waiting for, I got a big "well, either you have to make it for me, or at least tell me what goes in it!"

That's when light dawned. What seems so everyday and simple to one...it's a mystery to others!


Ingredients:
3 Hard boiled eggs (peeled)
1 ½ Tbsp mayonnaise
Salt and Pepper to taste


Directions:
1. Chop up eggs
2. Add mayo, salt, and pepper
3. Mash egg with fork while mixing

Pizza Steak Sandwiches (Crock Pot)

Last night hubby and I were sitting outside and heard some booms in the distance.
After a bit of looking, we realized we could see, just barely, through the trees, some fireworks being lit off.
Which, of course, are not allowed in the city here.

I found it funny (probably too funny) that then we heard sirens
Then we heard no more fireworks
He he he!

Our local papers do have "fire and police briefs" but the stuff you really want to know about is never included.
I will know how many random animals were seen walking around...but I bet there will be no firework info.

Inquiring minds want to know!

I lead a very very boring life. Sigh LOL

Ingredients:
1 ½ Lbs round steak, skirt steak, or other cut
6 oz Pepperoni
1 Onion (chopped)
1 Green pepper (chopped)
1 Red pepper (chopped)
28 oz can crushed tomatoes (drained)
2 Cloves garlic (minced)
2 Tsp oregano
1 Tsp basil
Salt/Pepper to taste
Buns
Provolone Cheese


Directions:
1. Place meat in crock pot
2. Stir other ingredients (other than bread and cheese) and pour over meat
3. Cook on low 7-8 hours
4. Shred meat with forks
5. Serve on buns topped with cheese slices

Italian Drip Beef Sandwiches

...and back to our Lennon/Vet story

When we left off, we had decided the runt baby needed to become part of our family.

They told us that one of the vet techs had taken the babies "under her wing" and was screening all potential owners. I had thought ahead and brought all of our pre approval information from the MSPCA.

We left, after being told it would be a few days before this particular vet tech would be reading our paperwork. That was fine, as we were totally unprepared.
When Cookie passed away, we got rid of everything.

Hubby headed on home, and the girl child and I headed off to a friend's house for pedicures.
So, we are sitting at our friends. Ankle deep in warm, soapy water...and my cell phone rings.
Hubby.

I answer and I hear this panicked voice "OMG, the vet just called, they said we can come and get him TODAY".
Not to worry, we can handle this. Well, he can..the girl and I were a little "indisposed".

Sent him off to the vet as we finished up.
Quick stop at a pet store to get basic essentials and we headed home to met our baby!

Imagine our surprise to walk into the house and see all the cushions off the couch. Hubby dearest had made a "fort" (of sorts) to contain the new little man. His reasoning was that Lennon had seemed scared to be in a big, new area and this was helping him.

Yeah, it helped until the first minute he heard the girl child's voice. He is so her cat. As soon as he heard her, he broke through the couch cushion walls and went running.
No fear from that moment on!

Onto some sandwich talk!
I made these...and they were delish...but I neglected to tell Hubby and the Girl that I was using the pepperoncinis. They ate the majority of the jar. Oh well!
I made do, and they were still good, we just had no extra for the top.
When Baked Bree first posted this, that is how she showed them. Fine by me though as they are not my favorite item.

Ingredients:
4 Lb beef roast
Pepperoncini (diced)
4 Cups beef broth
6 Tbsp Italian seasoning
Sub Rolls
Provolone Cheese


Directions:
1. The night before, cook your roast in the crock pot for 8-10 hours, until it is falling apart.
2. Add to crock pot the beef broth, the diced pepperoncini, 1 cup of the pepperoncini juice, and the Italian seasoning.
3. Refrigerate all night so fat will separate (keep meat in the juice it was cooked in)
4. When ready to “cook” dinner, skim the fat from the meat
5. Heat juice and meat on the stove top until warm.
6. Toast sub rolls in oven
7. Pile high with meat and top with cheese
8. Toast sandwiches in oven until cheese is melted
9. Serve with additional pepperoncini if desired
