Grinch Cake

When I saw this recipe on Oh Bite It I knew it had to be made.
I don't care what time of year it is, we all need a gooey green cake in our lives!

We brought this to a friend's house for a party, and it was certainly a conversation starter!

The ripe banana is not a powerful flavor, but it adds so much moistness, especially when dealing with a boxed cake mix.

I did mine in a 9 x 13 (easier to transport), but I think two 9 inch rounds with the frosting between the layers would be pretty cool too.

Ingredients:
1 Box yellow or white cake mix
(additional ingredients required per cake box)
2 Ripe bananas
Green food coloring
Frosting (white or green)
Chocolate sprinkles


Directions:
1. Mix cake batter per box instructions
2. Mash bananas with a fork and add to batter
3. Pour cake mix into desired pan size
4. Drop a few food coloring drops and swirl around batter
5. Bake per box directions for your size pan
6. If using white frosting, dye it green
7. Add 2 Tbsp chocolate sprinkles to the frosting
8. Frost cooled cake with goopy frosting
9. Sprinkle with additional chocolate sprinkles

Make Ahead Mashed Potato Casserole

Hubby is sick.
Help me now...we all know what the "man-cold" is like.




Sigh
It's funny because it is true.

Anyhoo...being a good wife, I saw this comfort food dish on Do They Have Salsa in China and decided it would be the perfect thing for sicky over here.

Yup. Won't cure a man cold, but it tastes dang good and is beyond comforting.


Ingredients:
2 Bags Steam and Mash potatoes
8 oz Cream Cheese (softened)
½ Cup sour cream
½ Cup butter (cubed)
¼ Cup milk
1 ½ Tsp Onion powder
1 Tsp salt
1 Tsp Garlic powder
½ Tsp Pepper
6 Bacon strips (Chopped)
1 Cup Cheddar cheese (shredded)
3 Green onions (chopped)


Directions:
1. Cook bacon until crisp. Set aside to drain.
2. Prepare both bags of Steam and Mash
3. Mash potato with cream cheese, sour cream, and butter
4. Stir in milk and seasonings
5. Place in a greased 9 x 13 inch pan
6. Sprinkle with cheese, onion, and bacon
7. Cover and refrigerate until ready to use
8. Remove from fridge 30 minutes before cooking
9. Bake, uncovered, at 350 for 40-50 minutes

Sweet and Sour Chicken

I love my random recipe cards, they always add little helpful tips.
Tips make my day just that much better!


  • Bake chicken in the sauce then cool. Refrigerate, well covered, for up to 2 days. Reheat in a 325 oven for 20 minutes before serving.
  • Make two meals at the same time. Bake a double batch of chicken and chill the extra breasts in some of the sauce. Drain, slice into thin strips, and serve on shredded lettuce with tomato wedges and dressing.
  • Two cups of hot cooked angel hair pasta is an elegant substitute for the rice in this dish


Ingredients:

6 Tbsp Olive oil
6 Tbsp Soy sauce
6 Tbsp Honey
3 Tbsp White vinegar
1 ½ Tsp Dried Thyme
1 ½ Tsp Paprika
½ Tsp Cayenne pepper
½ Tsp Ground allspice
1 Tsp Pepper
4 Chicken breasts
2 Cups hot cooked white rice

Directions:
1. Preheat oven to 375
2. Combine oil, soy sauce, honey, vinegar, thyme, paprika, cayenne, allspice, and pepper in a shallow baking dish. Mix well.
3. Pierce both sides of each chicken breast with a fork
4. Place chicken in baking dish, turn chicken several times with tongs
5. Bake chicken for 30 minutes
6. Serve chicken over rice
