Mashed Potato Cakes

What to do with all those holiday leftovers?
This is a great way to use up leftover mashed potato. We make it for breakfast, or as a side dish for dinner.

My uncle was telling me this past weekend that my aunt had made these, but mixed mashed potato with leftover sweet potato. For you sweet potato fans, this might be a good option!

Ingredients:
2 Cups Leftover mashed potato
1 Egg
2 Tablespoons Flour
Vegetable Oil as needed
Optional: Bacon bits, cheese, green onion

Directions:
1. Warm about ½ inch vegetable oil in a pan
2. Mix all ingredients together. If it’s not thick enough, add more flour
3. Make patties out of the mashed potato mixture
4. Put patty in oil, cook until golden brown. Flip and cook other side
