Coffee Cookies

These cookies are my favorite so far this year!
We omitted the raisins and nuts for various reasons, but loved what was left.

I made the batch, sent some to a friend of mine in NC (did you love them too?) and then we made short work of what was left over.
They are fluffy, soft, and just slightly coffee flavored.

We are not pot-o-coffee folk, and I wasn't going to waste a K-cup on a recipe. I happened to have some instant on hand from a previous recipe, so I whipped up a cup and went from there.

Make these cookies, that is an order!!

Ingredients:
1 Cup sugar
½ Cup butter, softened
1 Egg, well beaten
2 Cups flour
½ Tsp baking soda
¼ Tsp salt
1 Tsp baking powder
½ Tsp cinnamon
¾ Cup cold coffee
½ Cup raisins, chopped
½ Cup walnuts, chopped
1 Tsp vanilla


Directions:
1. Preheat oven to 400 degrees
2. Mix the sugar and butter together until creamy, then add the beaten egg. Mix well.
3. In a separate bowl, combine the flour, baking soda, salt, baking powder and cinnamon
4. Stir together, then add to the creamed mixture
5. Mix well, adding in coffee a little at a time
6. Combine raisins, nuts, and vanilla. Fold into batter.
7. Drop cookies onto a greased baking sheet
8. Bake 12-15 minutes
