I make out my grocery list for about a week and 1/2 at a time. This wrap was in the plans, so I knew I was shopping for the ingredients.
My grocery store has a great produce section. I have found some really strange items there, awesome variety. Everything is always super fresh too (bonus!).
I have bought alfalfa sprouts there before. Imagine my surprise to walk in and find NONE.
Circumstances forced another trip to that store and two other stores with produce during that week. Nobody had them!
It's the great alfalfa shortage of 2014.
A moment of silence please.
The wrap is yum without it, but my daughter and I missed them.
I only ate half of my wrap, and brought the other half to work the next day. The flavors were delicious the next day, and the hearty wrap kept it from being soggy.
Ingredients:
1 Lb boneless, skinless, chicken breast
8 Slices bacon
4 (10 inch) flour tortilla (spinach)
½ Cup chunky blue cheese dressing
2 Cups alfalfa sprouts
1 Cup drained roasted red peppers
¼ Tsp salt
¼ Tsp pepper
Directions:
1. Coat large non stick pan with cooking spray. Heat over medium high heat.
2. Sprinkle chicken with salt and pepper
3. Add to skillet, cook until browned (about 5 minutes)
4. Turn, cover, and cook for 5-7 minutes more (until no longer pink inside)
5. Remove chicken, set aside to cool
6. Cook bacon until crisp. Set aside to drain.
7. Spread tortillas with dressing (leave ½ inch border)
8. Slice chicken on the diagonal
9. Top tortilla with chicken, bacon, sprouts, and red peppers
10. Fold in tortilla sides. Roll up from bottom.
It looks so lonely without the alfalfa!
