Breakfast Burritos

Remember that yard sale we had at Nana's house?
(I made this awesome cheesecake?)
Since it was fall, in New England, and we would be outside...and walking around....I wanted to make a hot, portable breakfast for all.

Burritos were the answer.
Hot check!
Individual check!
Portable check!
Delicious check!

You want to start with the basic must haves: Tortilla, eggs, cream, salt and pepper (to make the scrambled egg base)
I was making 10 burritos, so I made the whole dozen eggs.
I like my eggs just slightly underdone. Reason being, these were being made the night before and heated in the oven the next morning. Nobody wants dry eggs!

Then I looked around to see what veggies I had available in the house
I didn't have any mushrooms (boo hiss!) but even if I had, I would not have put them in all of them since mushrooms are one of those foods that some people just can't handle. 
I sliced up all the veggies and sauteed them a bit before adding them into the egg.

Time to see what cheeses are in the house
I ended up putting a few cheese singles into the egg for creaminess and then adding the sharp cheddar for some tang

Now, on to the meat selection

OK, good enough variety!

After the eggs, veggies, and meat were cooked, it was time to stuff the burritos!
Add all the goodies you plan to....

Wrap it up nice and tight


Cover with tin foil and label.
I warmed them in the oven for awhile before heading out.

I ended up making 5 veggie with smoked gouda and 5 that were bacon and sausage with swiss cheese.

Everyone enjoyed just being able to "peel and eat"!


Ingredients:
12 Eggs
5 Tbsp Half and Half
Salt and Pepper
Cheeses
Veggies
Meats
10 Tortillas

Directions:
1. Saute vegetables
2. Cook meats
3, Mix egg, half and half, and salt/pepper
4. Scramble eggs in pan
5. Optional: melt cheese into your egg
6. Add ingredients to tortillas
7. Wrap like a burrito
